Cacao & Courgette Paleo Bread


I recently came across paleo bread and started to experiment with it. I’m looking at ways to reduce carbs and try new dishes and I came up with this Cacao and Courgette Paleo Bread. It is super easy and super tasty.

Ingredients

Many of the foods that I cook with have added health benefits. The benefit to you is enhanced recovery, boosted immunity and extra energy. What is not to like about that?! Cacao & Courgette Paleo Bread (GF)

Cacao & Courgette Paleo Bread (GF)

Ingredients

  • 1 cup courgettes, grated
  • 2 tbsp cacao, raw
  • 0.5 tsp baking powder
  • 5 organic eggs, lightly beaten
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract
  • 1 cup organic almond butter
  • pinch salt
  • 2 tbsp honey or maple syrup (optional)
  • 2 tbsp coconut oil

Instructions

  1. Heat the oven to 180. Whisk the almond butter until smooth;
  2. Whisk in the beaten eggs, until combined, then add the remaining ingredients until thoroughly combined;
  3. Pour the mixture into a greased loaf tin and bake for 20-25 minutes (until you can remove a knife, clean). Leave to cool and serve.
