Gluten Free Apple Walnut Bread


This is a great low-carb and gluten free apple walnut bread. Excellent for skin health, containing a lot of vitamin E and omegas 3 and 6; which are known to prevent a number of medical problems such as depression, cardiovascular disease, brain dysfunction, asthma and arthritis.You wouldn’t believe that it has no grains in it. Its moist, tasty and dense. Just lovely. I use it with cottage cheese, sprinkled in cinnamon and cottage cheese, or you could have it with Greek yoghurt and berries, nut butters or cream cheese.

This bread packs a nutritional punch. It is full of protein and has only 5g of carbohydrates per portion. You could just as easily omit the apple sauce.

Ingredients

  • 210g ground almonds
  • 125g walnuts, roughly chopped
  • 2 tbsp ground linseeds
  • 2 tsp baking powder
  • 1 tbsp ground cinnamon (I use cassia)
  • 1/2 tsp sea salt
  • 2 large eggs
  • 250g unsweetened apple sauce
  • 100ml coconut oil, melted
  • 60ml coconut milk

Instructions

  1. Pre-heat the oven to 160 and grease a loaf tin (22x12cm) liberally with coconut oil;
  2. Combine the dry ingredients, thoroughly;
  3. Combine the wet ingredients in a measuring jug, mix thoroughly;
  4. Gently pour the wet ingredients into the dry ingredients and mix until just combined (careful not to overwork the dough);
  5. Pour into a loaf tin and bake for 45-50 minutes (when you can remove a skewer clean). Leave to rest in the tin for 20 minutes. Then slice and serve.
