Goats Cheese & Red Pepper Frittata
This is a great dish and very convenient to make in advance for the week. It is low-carb, making it perfect for those looking for a healthy breakfast recipe, and/or those who want to lose weight. Not only does it contain masses of protein-keeping you full for longer-but it is a complete meal in one slice! You can eat it for breakfast and lunch. Here I make one with goats cheese and red pepper, but I picture an alternative with sliced ham and tomatoes which also delicious.
A Delicious & Low Carb Breakfast Recipe
Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. The word frittata is Italian and roughly translates to “fried”. In Spain, it commonly contains potatoes and outside of Italy and Spain, it is usually known as an omelette.
Many of the foods that I cook with have added health benefits. The benefit to you is enhanced recovery, boosted immunity and extra energy. What is not to like about that?! Eggs are the perfect meal – full of protein. Nutritionally, they contain: vitamins A, B2, B5, B6, B12, D, E, K; folate, phosphorus, selenium, calcium and zinc. I egg contains 6 grams of protein (containing all of the amino acids) and 5 grams of healthy fats! Despite the myth, eggs are high in cholesterol, but eating eggs does not have adverse effects on cholesterol in the blood for the majority of people and egg consumption consistently leads to elevated levels of HDL (the “good”) cholesterol, which is linked to a reduced risk of many diseases. Eggs contain lutein and zeaxanthin which are antioxidants known to have major benefits for eye health.
