Ingredients

Many of the foods that I cook with have added health benefits. The benefit to you is enhanced recovery, boosted immunity and extra energy. What is not to like about that?! Salmon & Prawn Stew

Ingredients

  • 1 tbs olive oil
  • 1 large red onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 500g passata
  • 1 skinless salmon fillet, diced into 2cm chunks
  • 150g raw shelled prawns
  • 3 handfuls organic kale
  • 2 tbs chopped green olives
  • 2 tbs capers or caper berries
  • A pinch of smoked paprika
  • Sea salt & black pepper

Instructions

  1. Fry the onions in olive oil until translucent, then add the garlic and cook for one minute;
  2. Add paprika and passata and seasoning. Simmer for five minutes;
  3. Stir in the salmon and prawns and place the lid on the pan for three or four minutes until the salmon and prawns are nearly cooked (they should be a light pink);
  4. Add in the kale, capers and olives, stir well and place on the lid. Simmer for two minutes and remove from the heat. Serve.
  5. This is perfect for a mid-week dinner, its so quick and very tasty. Its particularly good if you watching your carbs.
