Za’atar Roasted Squash with Smoked Mackerel and Yoghurt Dressing


This is one tasty recipe. Not only is it easy to make, it is full of vitamins, minerals which contribute to your well-being. Whether that be to lose weight, or enhance your recovery from addiction. Both the squash and smoked mackerel are great for your mental health.

Za’atar Roasted Squash with Smoked Mackerel and Yoghurt Dressing

Za’atar Roasted Squash with Smoked Mackerel and Yoghurt Dressing

Ingredients

  • 1 squash
  • 2 fillets smoked mackerel
  • 3 tbsp Za'atar
  • 3 tbsp extra Virgin Olive Oil (EVOO)
  • Cup of natural yoghurt
  • 1 tbsp parsley
  • 1 tbsp ground coriander
  • 1 tbsp EVOO
  • The juice and rind of one lemon
  • Fresh parsley, roughly chopped
  • 1 tsp nigella seeds
  • 1 chilli finely chopped

Instructions

  1. Dice the squash and mix in the za'atar and EVOO. Season.
  2. Bake for 20-30 minutes until soft.
  3. Whilst the squash is cooking, make the dressing: mix a cup of yoghurt, parsley, sumac, ground coriander and lemon until combined.
  4. Assemble the squash, mackerel and top with dressing. Sprinkle over nigella seeds, chopped chilli and parsley.
