Avocado Pesto Pasta


This avocado pesto pasta is super healthy – it contains avocados, parsley, garlic, hazelnuts, whole wheat pasta and extra virgin olive oil. The avocado gives it a rich creaminess and potent nutritional benefits.

Avocado Pesto Pasta

Ingredients

  • 1 tbs home made pesto (I used the parsley and hazelnut pesto on the blog)
  • 1 tbs organic hummus (optional - if not using, add another tbs pesto)
  • Extra virgin olive oil
  • Kale, washed and ripped off the stem;
  • 1 large ripe avocado
  • 150g wholemeal pasta

Instructions

  1. In a pan of hot salted water, add the pasta and cook according to packet instructions;
  2. Whilst the pasta is cooking, add the remaining ingredients to a food processor and blend;
  3. Once the pasta is cooked, drain all but a couple of tbs of the water, and stir in the creamy pesto.
