Healthy Banana Pancakes


These pancakes are awesome! I first had them in San Francisco last year and found it really hard to believe that they weren’t made with flour and a healthy alternative to normal pancakes – which have a high carbohydrate value. These healthy banana pancakes are made with just eggs, banana and almond flour.

Ingredients

  • 0.25 cup Ground almonds
  • 1 tsp Baking powder
  • 0.5 tsp Cinnamon
  • 0.25 tsp Nutmeg
  • 0.5 Banana, mashed
  • 4 Eggs, lightly beaten
  • 1 tsp Vanilla

Instructions

  1. Heat the oven to a low temperature. Mix together the dry ingredients until combined and set aside;
  2. In another bowl, mix together the eggs, mashed banana and vanilla. Then pour this mixture into the dry mixture and whisk thoroughly, removing all lumps;
  3. In a non-stick pan, place a little butter or spray and spoon about 1/4 cup of the pancake batter into the pan and cook on a medium heat, for two minutes each side. You flip when the pancakes surface is bubbling and the edges are slightly dry. As you cook the remaining mixture, pop the cooked pancakes into a warm oven until they're all ready to serve.
