Healthy Brownies


These healthy brownies are from a recipe adapted from Deliciously Ella’s first book How amazing do they look? Ella uses medjool dates, and sweet potatoes. Medjool dates are so luscious, but they are ridiculously expensive and can be a challenge to find. Therefore, I use regular dates.

Sweet Potato Brownies

Many of the foods that I cook with have added health benefits. The benefit to you is enhanced recovery, boosted immunity and extra energy. What is not to like about that?! Healthy Brownies

Ingredients

  • 600g Sweet potatoes, peeled and chopped
  • 80g ground almonds or coconut flour
  • 100g buckwheat or rice flour
  • 14 dates
  • 4 tbsp raw cacao
  • 3 tbsp pure maple syrup
  • pinch of salt

Instructions

  1. Pre-heat the oven to 180;
  2. Grease and line a 10" baking dish;
  3. Steam the sweet potatoes for 20 minutes until very soft and beginning to fall apart;
  4. Blend the sweet potatoes and dates until they become smooth and creamy;
  5. In a separate bowl, beat together the cocoa, syrup and salt. Then mix in the sweet potato and date mixture, until thoroughly combined;
  6. Place in a dish and bake for 20 minutes, until the fork comes out dry;
  7. Let the brownies sit for ten minutes to set. Then remove and set aside for a further ten minutes.
