Healthy Pumpkin & Oat Pancakes


This is a healthy recipe for one of my favourite meals, pancakes. These healthy pumpkin and oat pancakes are sugar free, gluten free and full of slow release carbohydrate and protein. Perfect to start the day. I hope you enjoy them as much as me!

Healthy Pumpkin & Oat Pancakes

Healthy Pumpkin & Oat Pancakes

Ingredients

  • 3/4 cup of oats
  • 3/4 cup of gram (chickpea) flour
  • 1 tsp cinnamon
  • 1 cup cooked pumpkin
  • 1 cup almond milk
  • 2 whole eggs
  • 2 tbsp olive oil
  • 1 tsp vanilla extract
  • 1 tbsp melted coconut oil
  • 1/2 tsp baking powder

Instructions

  1. In a food processor, blend oats, gram flour, baking powder and cinnamon until combined;
  2. Add the pumpkin and blend;
  3. Add the almond milk, eggs, olive oil, vanilla extract and melted coconut oil and blend until smooth;
  4. Heat 1 tsp coconut oil in a pan and pour in the mix to three small pancakes and cook, when they bubble, turn them over for a further minute. Keep in a warm over whilst you make the remaining pancakes.
  5. Serve with honey/maple syrup and seeds. This dish is particularly great with served with Greek yoghurt.
