Dragon Fruit & Acai Smoothie Bowl

Ingredients
Many of the foods that I cook with have added health benefits. The benefit to you is enhanced recovery, boosted immunity and extra energy. Dragon fruit contains a number of phytonutrients and antioxidants. It is great for prostate health, immunity, heart function, and lung health. Bananas are rich in fiber, antioxidants, and many other nutrients such as potassium. Bananas are helpful in moderating blood sugar levels, improving digestive health, and providing excellent fuel for exercise. Almonds are packed with vitamins, minerals, and fiber. Almond milk is often enriched with Vitamin D, which is associated with heart health, bone health, and immune function. With more Vitamin C than an orange, a handful of strawberries are great for boosting immunity, improving good cholesterol, lowering blood pressure, and preventing certain types of cancer.

Ingredients
- 1 pack frozen acai (Trader Joe's has reasonably priced acai in the freezer section)
- 1 pack of frozen dragon fruit (you can also use fresh, but the frozen usually contains the dark purple flesh, responsible for the bright color of the smoothie bowl — just don't forget to peel it!)
- 1/2 cup unsweetened almond milk
- 1 small banana
- 1 tbsp unsweetened peanut butter
- 2 scoops of plant-based protein (hemp or pea is good)
- 1/4 cup of fresh or frozen strawberries
- Handful of spinach (optional)
Instructions
Blend all ingredients in a high-speed blender until smooth. Top with your favorite topping — I like coconut or hemp seeds.
