Goji Berry & Coconut Energy Balls

Ingredients
Many of the foods that I cook with have added health benefits. The benefit to you is enhanced recovery, boosted immunity and extra energy. Matcha is full of antioxidants, is a natural detoxifier, and can boost your metabolism. Goji berries* are high in vitamin C, fiber and iron, and they contain all eight essential amino acids. Dates are packed with vitamins, minerals, and fiber. Despite being high in natural sugar, dates can help to regulate energy levels and control blood sugar. The benefits of coconuts include contributing to healthy bones and teeth, treating skin disorders, and boosting immunity.
*You should avoid goji berries if you have low blood sugar, are using blood thinners, suffer with high or low blood pressure, or are pregnant or breastfeeding.
Recipe
Makes about 20 balls (depending on size)
Ingredients
- 1 1/2 cups of pitted dates
- 1 cup goji berries
- 2-3 tbsp melted coconut oil
- 1 cup cashew pieces
- 1 cup unsweetened desiccated coconut, plus 2 tbsp set aside
Instructions
- Place all ingredients in a food processor and process until all ingredients are finely blended and a ball starts to form.
- Remove the mixture and place in a bowl.
- Take small amounts and roll into golf ball-sized pieces.
- Roll in leftover coconut and place in an airtight container.
These can be stored in an airtight container in the fridge for a couple of weeks.
